Some delicious cooking

This weekend I was very cooking oriented. I was tired of the same ole recipes. So I broke out a bit...

Cheddar stuffed, Bacon wrapped Honey Dijon Mustard Chicken

Chicken thighs (or breasts) boneless/skinless
Equal parts honey mustard and dijon mustard
bacon
Cheddar Cheese

I used thighs because they were less expensive and came in a pack of 6 each. Breasts would be fine too. Just butterfly the breasts if you use them. Cut a block of medium sharp to sharp cheddar cheese into slices. I used a fair sized piece. Wrap the chicken around it. Schmeer the chicken with the mustard mixture and then wrap in bacon. I crossed my bacon using two strips per piece.

Bake at 400F for about 25 minutes or so.

I also served scalloped potatoes

Potatoes
Onion
Cheddar Soup (Campbells)
Cheddar cheese

Slice the potatoes kind of thin. I probably used about 5-7 nice sized potatoes. Dice the onions, mix in the cheddar soup, and cheese and add some pepper. I do not add salt because of the salt in the cheese.

Bake at 400F for about 45 minutes

I fixed the potatoes first, then did the chicken while the potatoes were cooking for the first 20 minutes.

COOKIES!

1/2 cup Peanut Butter (creamy)
1/2 cup Confectioners Sugar
2 rolls pillsbury cookie dough (or one family size)

Mix the PB and Sugar together. Roll into 12 balls. (I ate the left over mixture lol) Take a bit of the cookie dough, smoosh it flat, place the roll in the middle and then fold the cookie dough around it. Roll into a ball, smoosh down and place on the tray.

Cook for 10 minutes or until golden brown at 350f
