What you'll need:
2 lbs Chicken breasts or tenders cut up into bite size pieces
2 eggs
2 Tbs Oil (separated)
1 1/2 tsp Salt, Pepper, Red Pepper(opt)
1/2 cup Corn Starch + 1Tbs Corn Starch
1 Cup Flour
1 Tsp Minced Garlic
1/4 Cup Chopped Green onion
1/4 Cup Water

Orange Sauce
1 1/2 Tbs Soy Sauce
1 1/2 Tbs Water
4-5 Tbs White Vinegar
1/2 Cup Orange Juice
Zest from half an Orange(Optional, I used this the very first time I made orange chicken and it did not taste good too citrusy but to each there own)
Directions:
Whisk Eggs, 1 Tbs of Oil in one bowl, in another bowl preferably with a lid(cuts down on coating you can just shake it and your done), mix 1/2 cup cornstarch and flour, Mix chicken pieces in egg mixture and place in flour shake to coat.



I use a deep fryer to cook my chicken but you can also use a frying pan or a wok and heat oil and fry chicken 3-4 min each side until cooked through and golden brown, remove from oil and place on paper towels to drain set aside.

Clean Pan and allow to reheat on burner for 15 seconds, add remain 1 Tbs oil, Minced garlic, Salt, Pepper, Red Pepper(opt) and cook for 10 seconds, add Green onion, add the orange sauce and bring to a boil.


Add in chicken stir to coat, mix together 1 Tbs Cornstarch and 1/4 Cup water until smooth, add to chicken and stir, heat until sauce has thickened.

You can serve over rice or make some fried rice to go with it.
