I swear once you've made these marshmallows you will never eat another store bought marshmallow again. These are soo light and creamy and just all around yummy goodness, then you add chocolate in the mix and you've got the most delish snack ever! 

Lets get started!
place:
1/2 Cup cold water in a large bowl (or in your kitchen aid mixer)
3 Pouches (or 2 1/2 TBS) of unflavored Gelatin sprinkle over cold water in large bowl set aside


In a pot place:
1 1/2 Cup Sugar
1 Cup Light Corn Syrup
1/2 Cup Water
1/4 Tsp salt

Cook on med until sugar dissolves stirring occasionally, then cook on high until sugar reaches firm ball stage about 5 minutes, or 244 degree's on a candy thermometer. If you don't have one, you can easily do a test by dropping a tiny drop into cold water, if the sugar is firm but still ply-able then you've reached the firm ball stage.
Add immediately to the gelatin mixture BE CAREFUL! as the sugar will boil and may splash, stir on low until combined then on high for 15minutes (I used a kitchen aid mixer but you can also do this with a hand mixer for the same amount of time.), until light and fluffy then add 2 TBS of vanilla and blend pour into a lightly sprayed pan smooth out and let sit over night, covered loosely with plastic wrap.


lightly sprinkle your cutting surface with powdered sugar, spray your knife with cooking spray.
flip your pan over and cut Marshmallows into squares, lightly toss your cut marshmallows in powdered sugar so they don't stick.


Take 1 pkg of chocolate chips place in a microwavable bowl cook for 60 seconds stir if they aren't completely melted microwave at 30 second intervals stirring and until melted NOT hot just melted.
This part can be very time consuming, you can either dunk them in the chocolate or do it by hand by placing a spoon full in the palm of your hand and coating them( this method worked best but was VERY messy lol). Place coated Marshmallows on a baking sheet lined with waxed paper and place in the freezer for 5 - 10 minutes until chocolate is hardened.
