I just got home from getting groceries. I'm planning on eating a lot healthier. I used to keep up with a food diary, but I've stopped. Idk why. I just have. But I plan on starting back. This is what I am cooking for supper tonight;;

Garlic Chicken and Gravy
Prep/Total Time: 25 Minutes

-4 boneless, skinless chicken breast halves
-1/4 teaspoon salt
-1/4 teaspoon pepper
-5 garlic cloves, peeled and chopped
-2 tablespoons butter
-1/2 cup plus 2 tablespoons chicken brother, divided
-1/2 cup white wine
-1/2 teaspoon dried basil
-1/2 teaspoon dried oregano
-1 tablespoon all-purpose flour

Tip Peeling & Chopping Garlic::
Place garlic cloves on a cutting board. With the flat side of a chef's knife, press down until you hear the peel crack; remove and discard peel. Then chop up the garlic.

Sprinkle chicken with salt and pepper. In a large skillet, cook chicken and garlic in butter over medium-high heat for five minutes or until browned. Add 1/2 cup of broth, wine, basil, and oregano. Bring to a boil. Reduce heat; cover and simmer for 7-9 minutes or until chicken is no longer pink. Remove chicken with a slotted spoon and keep warm. In a small bowl, combine flour and remaining broth until smooth; stir into pan juices. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Serve over chicken.

So, I've never cooked this, but there is a first time for everything. Abbye sent the recipe to me. It sounds good, so I'm going to try it.

But I'm going to go and finish making out my study notes for Anatomy and Physiology. My teacher is coming Saturday at noon. (:
