This morning when I arrived at work I walked from the parking lot with a co-worker who pulled in right behind me. He was complaining about driving through the school zone near his house, apparently the crossing guard wasn't on the job this morning and cars were trying to force their way out into traffic after dropping off their children. He made some comment about how some people seem to lose the skill of driving after having kids, saying how much of a hurry the parents were to drop them off and pull out of the school. Without breaking stride I observed, "If they had been in as much of a hurry to pull out before they had kids, they wouldn't have to deal with them. He walked about three steps before it hit him, and he doubled over laughing.
I don't think I wrote about the weight loss challenge at work. Three of the management staff proposed a challenge to all the employees: The staff would form a three-person team and lose as much weight as possible over the next six months. Any employees who are interested in losing weight can form their own three-person teams and have their weight tracked by the company nurse. Any team that loses more weight than the management team shares in a prize. I'm trying to seriously lose some weight, I'd be happy with 30 pounds but honestly I could afford to lose 40 pounds to get back down to my college weight. The timing was very good because my wife was diagnosed as borderline diabetic and she has just begun having to watch what she eats as well. For instance, our Friday night stop at a fast food place before shopping for groceries this past weekend was at Chik-Fil-A where she got a grilled chicken wrap and I got a grilled chicken salad with light Italian dressing. It was tasty, filling, and probably much lower in calories than a quarter pounder with cheese! While at the store I bought chili fixings for my lunch this week. Instead of ground beef I got a pound of ground bison and a pound of ground turkey breast. I improvised the recipe a bit to pump up the flavor of the turkey and bison, I browned them in a pan with balsamic vinegar, Dale's Marinade, chili powder, fennel seed, sage, freshly ground pepper, and a splash of tequila! Once they were browned I cooked the meat into my normal chili fixings plus some jalapenos and some cooked red peppers then refrigerated it. I tried it for lunch today, it was the best chili I have ever made! Full-flavored and with a hint of sweetness and none of the limp texture and weak flavor I'd expect from turkey chili.
I also found a recipe for honey-whole wheat bread for the bread machine. That turned out fantastic, in fact my brunch on Saturday was two slices of the home-made bread with cheddar cheese slices on them. Tasty and filling! One other thing I'm trying to do is to cut down on my soda and sweet tea intake. I think I've only had one soda since Thursday and I'm doing well on my sweet tea also. We did go out to eat on Sunday but I got a grilled chicken breast on a bed of shredded tortilla chips with rice on the side. It did have a cheese sauce over the chicken but all in all it wasn't a bad entree for a restaurant meal. I had two glasses of tea with the meal, now I need to cut back on that... |
