Don't gag now Ang, but I'm posting my pumpkin pie cookies! Muahahaha...
Really, I just wanted a spice cookie. I *heart* spice cookies but I didn't have the stuff to make molasses cookies. I had a sugar cookie recipe and some canned pumpkin and my memory of vegan substitutes. VIOLA! Pumpkin Pie Cookies!
What you'll need: 1.5 cups of flour 1/2 cup sugar 1/2 tsp. baking soda 1/2 tsp salt 1 tbsp pumpkin pie spice (If you don't want to spend the 3 or 4 bucks for a tiny ounce, try making a mix of cinnamon, ginger, allspice, and nutmeg and using a tbsp of that) 1/2 cup oil 1 tbsp vanilla extract 1 tbsp maple syrup 1/2 cup canned pumpkin (plain, not the pumpkin pie filling kind or you'll have a sugar overload!)
Optional ingredients: Cinnamon and sugar to roll cookies in. Extra flour to roll out dough for cookie cutting. If you do this, I do not know the cooking times so watch cookies carefully so they don't burn.
STEP ONE!: In a large mixing bowl, add flour, sugar, baking soda, salt and spice and mix. I use a whisk to break up any flour clumps.
STEP TWO!: In a smaller mixing bowl, add the rest of the ingredients and mix.
STEP THREE!: Add wet ingredients to dry and mix. After it starts to crumble up, I hand mix the dough. You should mix until combined into a smooth dough.
STEP FOUR!: Preheat oven at 375. Now you have the option to flour a clean countertop and roll out the dough, adding flour to make a smooth, non sticky dough to cut out with cookie cutters. Because you will most likely flatten the dough more than the dough balls, I suggest baking on a lower temp or to watch that the cookies don't burn. I don't have counter space or cookie cutters so I roll the dough into balls the size of small golf balls. Then I pat them into a disk about 1/4 inch thick. Another option is to roll the balls in the cinnamon/sugar mix.
STEP FIVE!: Bake cookies for about 8 minutes and cool.
The inner cookies were cooked with the cinnamon sugar coating. These have the yummy pumpkin spice taste, but there isn't an overwhelming taste of pumpkin. If you make them like mine, they will be soft cookies, not crunchy.
